Have you ever heard of Danielle Walker from “Against All Grain?” Well, now you have. Check her and her story out. It’s so rad. When I heard she had a pizza crust recipe, I short of cried. She has two recipes, we tried the cauliflower one and It turned out great. It is not dairy free. You can use parm. like the recipe calls for or whatever cheese you are comfortable with. If you are not comfortable with cheese, I would recommend using another egg and maybe some ground flax seed. Not normally a fan of flax but this is a small enough quantity I wouldn’t worry.
Here’s what you need
1/2 Head Cauliflower
1/2 C Parmesan Cheese
Oregano and basil (fresh or dried. If it’s fresh, make sure to mince)
1. Throw cauliflower into food processor and pulse till finely minced.
2. Steam cauliflower. I did this in a sieve over a pot of water. Steam until tender but not cooked thoroughly.
3.This part is important, pay CLOSE attention (because I didn’t). Wait until the cauliflower has cooled otherwise you will end up with scrambled eggs.
4. Once it truly is cooled, throw into mixing bowl with the rest of the ingredients. Mix thoroughly with hands. Line baking sheet with parchment paper. Pat mixture into circles (size and thus quantity is your choice) on parchment paper, no more than 1/2 inch thick.
5. You can brush or drizzle your unbaked crust with the fat of your choice and sprinkle salt over top. Bake at 450 for 15ish minutes. You want the edges to be pretty darn golden.
That’s it!! It’s so delicious. We topped one with marinara, one with pesto and one with only coconut oil. You can add ground meat, shredded meat, tons of veggies, garlic, olives, shrooms . . . whatever!! Thank you Danielle!!!
